Get more taste, nutrition from correct garlic preparation

This can help to keep arteries unobstructed and thereby decrease the chances of a heart attack. Lab studies have linked these benefits to the chemicals called thiosulfinates, special compounds which are responsible for the pungent smell of onions and garlic.
Scientists have also discovered that different cooking and preparation methods can affect the production of thiosulfinates in garlic and onions. According to Philipp Simon, a plant geneticist from the University of Wisconsin, crushed garlic can reduce platelet clustering sufficiently. The assembly of researchers working at the Cuyo University of Argentina found the same results. They gathered approximately four pounds of garlic and crushed them into half with a simple hand press. Then the garlic was stored at room temperatures for 10 minutes and was cooked in a microwave oven at 400 degrees for 20 minutes in boiling water. The result of this experiment was that thiosulfinates were not produced until and unless clove was cut or crushed. The cooked batch of garlic had no clumping reduction ability but lightly cooked, crushed garlic was effective in reducing the clustering of platelets.
According to a survey, there should be more consumption of vegetables and fruits as they are nutritious foods rich in antioxidants, minerals, fiber and vitamins and low in calorie content. Temperatures at which they are kept affect the growth of lycopene which is an antioxidant component, in tomatoes and watermelon. That is why fresh fruits and vegetables combined with a diet of whole grains form the foundation of a healthy diet.
